Attack of the killer tomatoes

At the end of the growing season I always end up with tons of tomatoes from family and friends. We quite frankly are sick of them by this time and I hate throwing anything away. I like to make stewed tomatoes. Easy and they make a great addition to chili, stew or any other recipes you like tomatoes in. Roma are great because they peel the best. Boil water and drop in your tomatoes. After one minute take them out, cut off the stem end and squeeze gently from the back. POOF! Skinned Roma. Regular tomatoes take just slightly more effort. Cut into chunks, add green peppers,onions, salt and pepper to taste, cook until peppers are tender. Cool. Fill Ziplocks half way, lay flat in freezer. Happy, happy week and happy cooking!
